Alkalized cocoa is a bit darker in color and has a mellow flavour that is often associated with earthy, woodsy flavours. Because alkalized cocoa isn't acidic, it doesn't react with leaveners like baking soda, so recipes with alkalized cocoa are usually leavened by baking powder, which has a neutral pH.
