Green peppercorns are picked unripe and freeze-dried to preserve the colour and flavour. Black peppercorns are also picked unripe, but are then fermented and dried to obtain the deep colour and classic piquant flavour. The white peppercorns are picked when fully ripe and then treated with water before drying, which pulls off the red skin and reveals the white center. Pink peppercorns are not really related to peppercorns but came to have this name because of their visual resemblance and because they also have a peppery flavor.
